Cardamom Masala is a wonderfully aromatic, sweet and spicy Indian blend. Sometimes known as “elaichi masala”, cardamom masala features cardamom as its main ingredient. While cardamom is used worldwide, cardamom masala is particularly significant in Indian culinary traditions. On the Indian subcontinent, cardamom has been used for over 4000 years and in ancient India, it was highly prized, regarded as a symbol of luxury and hospitality. It is great mixed with a little yoghurt and coated over meat and/or poultry before leaving to marinate for hours. This Indian spice blend is perfect for making Chicken Cardamom Masala, Parsnip, Pea and Carrot Curry or Masala Rice. This Masala mix can also be used for seasoning finished mild curries like Korma or Pasanda for a nice kick. Meanwhile, in Indian sweets and desserts, this masala mix is often used to infuse a warm, aromatic flavour. It’s a common choice for flavouring milk-based sweets and treats.
