Shrimp paste, or Thai Kapee, is fermented and ground shrimp. It is a brilliant and healthier alternative to fish sauce and is a very important ingredient in Asian Cooking. The taste is highly salty, with an incredibly pungent scent. Like anchovies, the fishy flavour is not noticeable when cooked. The paste adds a rich, salty and Umami complexity to finished dishes.
